LISTEN UP! I
have never STRONG ARMED readers to
try one of my wine recommendations. However, please
permit me to do a little ARM TWISTING.
THIS IS A MUST

LIOCO
is a trend setting collaboration by two dynamic wine
professionals; Matt Licklider a seasoned wine import
specialist, and Kevin O'Connor, the wine director at Michelin
Two-Star Spago-Beverly Hills. My discovery
is their 2007 LIOCO
Chardonnay, sourced from a blend of sites
in the creek-bed soils of Sonoma from Chalk Hill, Russian
River Valley, Dry Creek and Alexander Valley. Using
indigenous yeast, this Chardonnay is fermented dry in
stainless steel and allowed to rest on the lees for 3
months. It is bottled unfined and unfiltered. But
more importantly, not a splinter of oak is employed, so
the wine expresses its natural terroir, and the
flavor components are not adulterated or
camouflaged.
Up until now the trend has been to make unoaked
chardonnay with bracing acidity and tartness by
not allowing malolactic fermentation. "MLF", or
"ML" as it is abbreviated in jargon, is a secondary
fermentation process that uses bacteria to convert
the wine's sharp malic acid (think green apple) to softer,
lush, creamy lactic acid (butter).
Licklider-O'Connor's Chardonnay is 100% ML complete. The
aromas are compelling with a creme brulee or caramelized
sugar, co-mingling with citrus and tropical fruit. But
the mouthfeel and texture is the unexpected surprise as a
rich suppleness with hints of butterscotch, meets vibrant
flavors of lemon curd, orange peel, pineapple and
pear.
Honestly, you never miss the French oak,
and you don't pay the extra price for the expensive
cooperage, and the extra labor cost to
monitor the individual barrel fermentation and all the
cleanup! The 2007
LIOCO performs like a $35 plus bottle of
high rated Chardonnay, but it retails for just

Side note- Just about all red wines under go the
malolactic fermentation process, or you would find them
too sharp and acidic to enjoy.
