Gelida Brut Gran Reserva Cava comes from the winery’s best vineyards located in Penedes superior; Macabeo from Can Simon, Xarel-lo and Pinot Noir from Can Prats, Parellada from Can Castany, and Chardonnay from Can Miquel de les Planes in Gelida. These vineyards were planted between 1965 and 1990 in calcareous sandy soils at elevations up to 1300 feet. All farming is organic and bio-dynamic. Harvest is manual. Each varietal is treated separately with a gentle press of 50% extraction of free run juice. The first fermentation (methode champenoise-traditional) is spontaneous with indigenous yeast and takes place in small stainless steel tanks at controlled temperatures. Of significance, these bottles are aged 40 month on the lees after the secondary bottle fermentation. Bottles rest one year after disgorgement, and that date is noted on the back label. This flagship wine undergoes a rigorous panel tasting by the D.O’s regulatory body to assess if it is worthy of the Gran Reserva designation.
