Cantine Paolo Cali is situated in the Salmé district of Vittorio in the heart of the Cerasuolo di Vittoria DOCG and Vittoria DOC regions. Within the larger estate, 15 ha of organic vineyards are planted on pre-historic marine sand dunes at elevations of 180 m. The sand is approximately 8 meters thick and with a substrata of limestone bedrock. Although this territory is about 6 miles from the sea, these sand dune vineyards were once sea beds many years ago.
A very warm 2016 vintage reduced yields, and concentrated flavors. All farming is manual and without chemicals, although copper sulfate is used when necessary to combat moisture and mold. Harvest selection and sorting is done by hand. Fermentation is conducted in temperature-controlled stainless steel tanks with natural yeasts.
