Former assistant winemaker at Arcadian, Justin Willett’s focus is on the old vine vineyards of Santa Barbara county. His quest is for purity and transparency, and to capture the nuances of the local terroir.
The 2017 Chardonnay is sourced from Bien Nacido (planted in 1973), Dierberg (1990), La Rinconada (1996), and Sanford & Benedict (1971). The vines are planted on shaly loam, sandy loam, shaly clay. The low yield harvest in August was whole cluster pressed to tank, settled overnight. Racked to another tank to begin fermentation. Once active, barreled down, mostly old, neutral oak. No battonage. The wine was refined in barrel for about 10 months, then racked to tank for additional time before bottling. 12.5% Alcohol.
