Aged 6 months in 350L French (Allier) oak barrels of between 1-4 years old.
100% Vijariego Blanco, a grape variety unique and indigenous to the Canary Islands. The best description we can think of is that it’s similar to Premier Cru Chablis (Chardonnay): high in acid, salty, and well-structured. This wine hints of sliced pear and tropical fruits and is slightly riper, more viscous and weighty on the palate than previous vintages. Lip smacking delicious!
Viticulture at Viñátigo is sustainability focused. The grapes are hand-harvested and fermented using the natural yeasts from the vineyard. Grapes go through two selections and sortings, first in the vineyards and then again in the winery. Minimal sulfur is used in the winery and no synthetic materials are used in the wine making.
