Francoise Chidaine leaves Montlouis and Vouvray to source from number of organically farmed vineyards in Touraine to produce this Sauvignon Blanc. The soils are a clay mixed with flint, and clay with a chalky subsoil. Hand harvested in early to mid September. Indigenous yeast fermentation in temperature controlled stainless steel vat where the wine remains on its lees until bottling in March. Boasts notes of citrus/grapefruit, and stonefruit on the nose, followed by lovely acid and mineral undertones on the palate. Always an exceptional value!
