From the chalky-limestone clay soils of Vouvray, the Boutet Saulnier family has traditionally farmed its 12 hectares of Chenin Blanc with an eye for sustainability for the last 80+years. In 1997 Christophe Boutet tooks the reins. His portfolio has an extensive range of dry to dessert style still and sparkling Chenin Blanc. But it is this outrageously delicious sparkling demi-sec that recently caught our attention because of its overall versatility. Rich and lush and certainly not dry, but at the same time not what you would categorize as a dessert wine, but still suitable! Bolstered by citrusy acidity, the fresh, but ripe baked “golden delicious apple” pie-like fruit is certainly enjoyable by itself on a warm summer night, or with a fruit and cheese platter, or yes…..an apple tarte tatin! Serve well chilled!
