The 2006 harvest in Casablanca was longer than anticipated. and required repeated combing of the vineyards and extensive grape tasting to ensure that each plot was completely ripe. Using effective canopy management and by conducting two green harvests, problems with botrytis were avoided, and the final grapes were picked late - May the 17th. Harvested by hand in small cases of 12 kg and transported in refrigerated trucks. 100% of the fruit was selected by hand on a sorting table.

100% of the must was pressed directly without skin contact. 60% of the must was barrel fermented and aged 10 months in a combination of new French oak barrels (40%) and in used French oak barrels (20%) with lees stirring twice a month. 40% went through fermentation and aging in stainless steel tanks. Fermentation temperatures were between 16-22 ºC in the barrels and 15-17 ºC in vats. Malolactic fermentation: 0 %.

Nicely focused, with a racy core of fig, hazelnut and pear notes that stays pure and elegant as the toasty edge remains in the background. The finish is long and juicy. Very stylish. - 90 points, Wine Spectator
