Founded in 2006, the family run Caraccioli Cellars aims to deliver the highest quality wines through top-tier grapes from the Santa Lucia Highlands. Michel Salgues, previously head winemaker at the Roderer Estate in the Anderson Valley of Mendocino for 20 years, leads Caraccioli's sparkling wine program to produce a dazzling Brut Cuvee and Rose.

According to French law, Champagne Houses in France must use the first 150 of the 180 gallons of juice extracted from each ton. Caraccioli Cellars improves upon that method and selects only the first 120 gallons per ton. This provides the best "heart" juice from each grape and lowers the possibility of any off flavor or defect in the juice.

A Santa Lucia Highlands sparkling wine, the Brut Cuvee is composed of 60% Chardonnay and 40% Pinot Noir. Extremely compelling for its elegant, creamy mousse, the smooth yeasty nose is nuanced with toasty vanillin and brioche. Lively, full and round on the palate with a foamy mouthful of energy, this dry sparkling wine has a powerful long finish with hints of almond and citrus berry.
