This is a long established, traditional farming-winemaking family with records going back as early as 1560 when Sébastien Clément was already a renowned winemaker in Menetou-Salon. The region has history of viticulture going back to 1060AD.
100% Sauvignon Blanc from 20-40 year old organically farmed, southwestern exposed vineyards on Kimmeridgian marl-limestone.
The grapes gently handled via gravity, hand sorting, and pneumatically pressed whole-berries. Cold stabilization, then indigenous yeasts for fermentation in temperature controlled inox tanks. Maturation on the fine lees and then bottled in the spring.
A refined Sauvignon Blanc with citrus and passion fruit notes. Fresh quenching acidity with underlying minerality on the extended finish. Perfect for shellfish and fin fish. .
