Sara Perez and René Barbier Jr “Dido” tinta project is their tribute to the youth, tenacity and love of Ganatxa.
This wine comes from a Falset plot of 10 hectares of degraded granite land called gravel. The sandy gravel structure and graceful texture changes temperature rapidly depending on the climate. Heated during the day and cooled at night, allowing the grapes a good and long ripening process towards maturation.
Garnatxa coming from this gravel is an explosive and fresh fruit expression. The deep dark color is due to the diurnal range of day and night temperatures, and we keep the berries whole and allow for an extended maceration on the skins. Our approach is non-intervention to truly express the place. The wine is fermented in clay amphora and concrete tanks. 40% remains to age in tank to emphasize the fruit. While 60% of the wine is aged for 16 months in different used wood barrels from 300 liters up to 4000 liters. Composition is 60% Garnatxa, 20% Sirà, and 20% Carinyena (Carignan)/Merlot and Cabernet Sauvignon.
“The red 2018 Dido comes from their youngest vineyards, mostly under 30 years old, on granite soils that provide freshness and tension to compensate for the warmth of the southern Montsant. It’s a blend of Garnacha, Syrah, Cariñena, Merlot and Cabernet Sauvignon from five different growers. The Garnacha and Syrah are fermented together with some 30% whole clusters and a long maceration, and the rest of the grapes fermented destemmed with a short maceration, all with indigenous yeasts and mostly in concrete vats. Sixty percent of the volume matured in barrels and foudres of sizes varying from 300 to 4,000 liters, and the rest was kept in concrete for 16 months. It seems like the combination of granite soils and the cooler year has worked wonders for this wine, which showed spectacularly. They say this is what they wanted to achieve with this wine; it is floral, expressive, clean and focused, with perfectly integrated oak, all the varieties complementing each other—not showing any varietal character—and a juicy palate with astonishing balance.
