Description

Upon his completion of wine school in Beaune, Roland founded the domaine in 1978 in the small village of Lignorelles about 4 miles northwest of Chablis.  Roland Lavantureaux is now run by his two sons Arnaud and David. “Vieilles Vignes” is sourced from a .9 hectare parcel planted in the 1960s on Kimmeridgian limestone in the village of Lignorelles. These vines have a southeastern exposure and thus benefit from strong sunshine to ripen properly. The dry farmed, very deep roots attribute to this wine’s extra “tension”, laser-like focus, and refinement.

The alcohol fermentation takes place in temperature controlled stainless steel tanks which enable fine and precise aromatic development. The aging extends 10 to 12 months in 40% stainless steel vats to preserve the freshness, and 60% in used 2-5 year old “neutral” oak barrels which adds complexity and depth to the wine.
