Paying homage to Alsace, France – The Union Sacré wines are made by two friends from different continents. Union Sacré exists at the meeting of worlds. Made by two longtime friends, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier Arnaudin is a WSET certified, oenology degree holder from France, while Philip Muzzy is a self-taught designer from Michigan who kind of misses living in a van.
Between the two of them, Xavier and Philip have 25+ years experience working in Central Coast wineries. Xavier has been cellar master or assistant winemaker for some of the Central Coasts most luminous wineries including Herman Story and Sans Liege. Philip cut his teeth at Proof Wine Collective.
This Pinot Blanc is another exceptional value from Union Sacré. 100% Pinot Blanc from the Oasis Vineyard in the Santa Lucia Highlands of Monterey County, the grapes are cold soaked on the skins overnight, and then gently pressed unfiltered for a cool ferment at 55 degrees in stainless steel where the wine rests on its fine lees for two weeks. Then the wine is moved to 600 liters used, neutral wood puncheons where it is aged for 6 months. We like the low alcohol too at just 12.2%.
Fresh, springtime floral lime blossoms, citrus zest, watermelon and canteloupe aromas are fragrant and compelling. The flavors hint of vanillin, peach skin and crushed white pepper, and are accompanied by a creamy texture on the palate. Fresh and youthfully vibrant, enjoy as a “patio pounder”, or more seriously with grilled Moroccan spiced swordfish with a cucumber, preserved lemon, and fresh mint relish! Don’t forget to drizzle with the EVOO. YUM!
