A refreshing blend of 80% Grenache Blanc, 10% Picpoul, 10% Rolle from the Wylie Vineyard planted on “Boomer” soils (rocky decomposed granite with veins of quartz and limestone throughtout) at 2900 feet above sea level in 1981.  

Adam Smith obsession with wine began when he was 21, an age when he was simultaneously preoccupied with music, art and poetry – in other words, the trajectory of a career bohemian. He was swept up in both the romance and history of the wine world, carrying vivid memories of visiting the vineyards in Apple Hill (El Dorado) as a child and after a serendipitous move to Portland landed him a wine cellar position at Domaine Serene, under wine-makers Tony Rynders and Drew Vogt, the hook was set. Later assistant winemaker positions at Shea Vineyard and Domaine Serene, paved the way for him to be at the helm of the inaugural iterations of Domain Nicolas-Jay. However his heart was always in El Dorado, so when an opportunity arose to be director of winemaking at Skinner Vineyards in 2018, he jumped at the chance of making the best expressions of El Dorado terroir. A few years later, he launched his own Rhone-focused passion project, Cold Spring where he continues to produce exquisite, site driven wines.  Low alcohol at 13.2% alcohol.  300 cases produced.  A perfect value for warm weather frolic and enjoyment.
