The “Dolomite” designation comes directly from the decomposed dolomite granite soils where the grapes are grown. This distinct soil profile imparts a lively natural acidity and an extended, wet-stone mineral finish to the wine. [

For the 2022 vintage, the grapes underwent a cold soak for five days before being basket pressed. The wine was then matured for 14 months using an equal combination of neutral, older 300-liter French oak barrels and concrete tanks. This deliberate choice limits new wood influence to preserve the pure, bright fruit characteristics of the varietal. 

This wine is designed to be highly approachable in its youth and can be enjoyed immediately. However, its firm tannic structure ensures it will gracefully evolve with cellaring. It is projected to drink beautifully through 2030. 

For food pairings, its lively acidity and herbaceous notes complement rosemary-crusted lamb, roasted pork loin with plum sauce, charcuterie boards, or grilled autumn vegetables.
