Description

This wine is the result of a rigorous selection of our best grapes and the outcome of a perfect harmony between new techniques and tradition. The harvest is picked manually into small boxes. The wine is made by gently pressing the grapes, followed by alcoholic fermentation in stainless steel tanks at controlled temperature. The method used to produce this sparkling wine is the classic method (Méthode Champenoise), with free yeast, followed by 12 months aging in bottle.

Three years after first selling, these bubbles are still elegant with a fine, plentiful and persistent bubble.  But now the wine has traded a little freshness to showcase notes of evolving buttered brioche and toasted almonds.   Enjoy by itself or it’s an excellent accompaniment to a variety of tapas or a seafood tower.   In fact we discovered these vibrant bubbles over a tapas luncheon at the Sonoma restaurant Tasca Tasca.
