Description
This wine is the result of a rigorous selection of our best grapes and the outcome of a perfect harmony between new techniques and tradition. The harvest is picked manually into small boxes. The wine is made by gently pressing the grapes, followed by alcoholic fermentation in stainless steel tanks at controlled temperature. The method used to produce this sparkling wine is the classic method (Méthode Champenoise), with free yeast, followed by 12 months aging in bottle.
An elegant wine with fine and persistent bubble. It is extra dry (Brut Nature), refreshing and full-bodied on the palate. It is an ideal wine as an appertif or to accompany a variety of tapas or a seafood tower. In fact we discovered these vibrant bubbles over a tapas luncheon at the Sonoma restaurant Tasca Tasca.
