Description

Described by Wine Advocate’s William Kelley as a powerful, rich, and ample wine with enormous resonance. Aromas and flavors include apricot, spice, dried flowers, graphite, and lemon confit. It was vinified in neutral oak with a dosage of 2 g/L, and was disgorged in June 2021. – 96 points

Sourced from two sixty year old vine Grand Cru parcels on poor chalky soils in Avize.

The 100% Chardonnay grapes are pressed gently, the juices are clarified very slightly and then sent directly into neutral Stockinger oak casks where the natural alcoholic fermentation (indigenous yeasts) and the malolactic fermentation begin spontaneously.  The wines are matured on the lees during their first year, with no filtering or fining being carried out.

The bottles are taken down into the coolness of the cellars and stacked on lattes where the second fermentation takes place and the maturation continues slowly for at least 6 more years. Each bottle is disgorged by hand 1 year before being marketed. The dosage is only 2 g/l (extra brut).
