Organic and sustainable viticulture practices.  A manual harvest.  Then fermented and aged ten month in 60-gallon French oak barrels.  A cuvee blend composed of 80% Chardonnay and 20% Pinot Noir of classified Premier Cru vineyards from 50+ years old vines in Rilly-la-Montagne (Vallee de la Marne).  Forty-two months on the lees in the bottle while cellaring.  No malolactic fermentation.  After disgorgement a dosage of .7g/l.
