Description

Brothers Bertrand and Denis Chevillon are the fifth generation managers of this property in Nuits- Saint-Georges, which means they work the vines and make the wines.  Their father Robert, who was born in 1937 for whom the domaine is named, is still active as well.  Both brothers bring dedicated passion, experience, a tireless work ethic, and intensity to their work at the domaine.  Tasting through their palate of Nuits-Saint-Georges is a venerable tour of the appellation.

Aligoté is the new “trendy” aperitif, and often used as a base for Kir.  Savvy consumers have learned it can also be a delicious bone-dry white alternative to Chardonnay or Pinot Blanc.  The Aligoté is grown and vinified with the same care as their premier crus.  Organically farmed and sourced by the brothers from a tiny .16 hectare 50 year old vineyard site of limestone and clay where the vines are grown interspersed with Pinot Noir, the vines are naturally low yielding.  Hand picked of course, then completely de-stemmed and fermented in stainless steel tank.  Racked to mostly used oak where the wine ages for about 16 months.  Just a smidgeon of this wine is produced.

Citrusy floral notes with a linear palate of under ripe orchard fruit and herb nuances.  Mineral notes.  Bone-dry, fresh and with pervasive cleansing acidity.  Meant for early drinking by itself, or alongside shellfish, or even a fully ripened cow’s milk cheese.
