Vines: 22 and 50+ years old
Varietals: 40% Grenache, 20% Carignan, 20% Cinsault, 20% Syrah
Harvest: By hand
Vinification: Indigenous yeast. Destemmed. Temperature controlled stainless steel tanks. Burgundian
Aging: 50% oak barrels, 50% stainless steel tanks.
Try with roasted lamb with herbs, pork with black olives and thyme, or a traditional local cassoulet.
