Description

This is a complex terroir composed of sandstone, marl and limestone soils on small patches of vineyards surrounded by scrublands of pine trees, wild thyme and rosemary. A medium-bodied blend of four varietals; Syrah, Grenache, Carignan and Cinsault offering aromatics of red and black fruits with peppery spices and herbs de Provence. Fresh and layered with sweet tannins and a long mineral finish. Matured in equal parts of stainless steel and barrels.

Soils: Marl – sandstone – clayey-limestone

Surface area: North facing, walled 7.4 acre vineyard

Vines: 22 and 50+ years old

Varietals: 40% Grenache, 20% Carignan, 20% Cinsault, 20% Syrah

Harvest: By hand

Vinification: Indigenous yeast. Destemmed. Temperature controlled stainless steel tanks. Burgundian

Aging: 50% oak barrels, 50% stainless steel tanks.

Try with roasted lamb with herbs, pork with black olives and thyme, or a traditional local cassoulet.
